The Mannions have accumulated a wealth of experience working in various establishments across the globe, ranging from esteemed fine dining restaurants to cozy neighborhood bakeries. Throughout their journey, one common thread has always been present - a steadfast commitment to delivering exceptional customer service.

Kim has 25 years front of house experience in the industry with roles including section waiter, host, assistant manager and restaurant manager of venues in Sydney, Galway and Bathurst. This includes a position as Floor Manager of Loam, Galway, a Michelin Starred Restaurant.

John has 25 years experience as a professional chef. His roles have ranged from Chef de partie to sous and head chef at various restaurants in Paris, Sydney, Galway and Bathurst. This includes stints as Sous Chef at 2 hatted Lucios Italian, Paddington and Sous and Head Chef at Pony Dining in The Rocks and Neutral Bay.
